Course One
Smoked Salmon Cannelloni — smoked salmon, salmon roe, tobiko, shaved fennel, petite greens, Pernod beurre blanc
Course Two
Roasted Duck Breast (DF | GF) — chorizo socarrat, carrot tamarind chutney
Main
Roasted Petite Tender (GF) — potato pavé, charred broccolini, beet and sherry purée, sauce Bordelaise

Braised Celery Root — crispy mushroom cabbage dolma, vadouvan velouté, chili crisp, pickled celery

Poached Pear Dessert — vanilla bean syrup–poached pear, caramel sauce, rosemary chocolate soil, cinnamon cookie.
